Blueberry Glow Power Bowl

I don’t make grain bowls nearly often enough. Every time I do, I’m left feeling happy, satisfied, and wondering why I don’t make them more often.

Sometimes the simplest combinations bring the most joy—and this week at the farm, I threw together a bowl that turned out so good, I had to share it with you.

Meet the Blueberry Glow Power Bowl: packed with fresh greens, protein-rich quinoa, crunchy almonds, and juicy blueberries, all drizzled with our house-made Blueberry Balsamic Dressing. It’s light, vibrant, and full of energy—just what I need during these hot summer days.

Why I Love This Bowl

  • Quinoa provides a hearty, plant-based base.

  • Toasted sliced almonds offer a gentle crunch.

  • And that dressing? Tangy, fruity, and completely addictive.

It’s easy to prep ahead for a quick lunch, and it’s endlessly customizable. Add avocado, swap in goat cheese, or toss in some grilled chicken or chickpeas for extra protein.

🫐 Blueberry Glow Power Bowl

A fresh, vibrant bowl with quinoa, arugula, and a blueberry balsamic twist

🥣 Ingredients (Serves 2)

  • 1 cup cooked quinoa (cooled or warm)

  • 2 cups fresh arugula

  • ½ cup fresh blueberries

  • ½ cup microgreens (sunflower, radish, or a seasonal mix)

  • ¼ cup sliced almonds, toasted

  • 3–4 tbsp Blueberry Balsamic Dressing

Optional Add-Ins:

  • ½ avocado, sliced

  • Crumbled goat cheese or feta

  • Grilled chicken or chickpeas

🥗 Assembly

  1. Layer the arugula in the bottom of two wide bowls.

  2. Spoon quinoa into the center, or arrange it in a ring for visual flair.

  3. Top with blueberries, microgreens, and toasted almonds.

  4. Drizzle generously with your Blueberry Balsamic Dressing.

  5. Serve immediately, or chill slightly for a refreshing lunch or light dinner.
