7 Easy Ways to Use (and Store) Your Spinach Super Sale Haul

Did you scoop up some of that sweet, overwintered spinach from the farmer’s market? Whether you're staring down a full pound or just a generous handful, here are some simple and tasty ways to enjoy it—and make it last!

1. Toss it in a smoothie

Spinach is the ultimate stealth veggie. It’s mild and blends up smooth. Add a handful to your morning smoothie and you’ll barely notice it's there. Pair it with banana or frozen fruit for a fresh green boost. Bonus: you can freeze spinach specifically for this purpose (see tip #7).

2. Sauté it with garlic

It doesn’t get simpler than this: olive oil, chopped garlic, a pinch of salt, and a big handful of spinach. Sauté just until wilted, or let it get crispy like my son, Paul. Serve it with eggs, grilled cheese, or anything that needs a little green on the side.

3. Make a batch of soup or stew

Our favorite? A hearty chickpea and spinach stew. Spinach goes into so many soups—just chop and stir it in at the end to keep its bright color.

4. Add it to pasta or grains

Stir chopped spinach into warm pasta, rice, or quinoa. It wilts perfectly with the residual heat. Great garnished with pesto, parmesan, microgreens or your favorite dressing (hint, hint, a warm quinoa and spinach bowl with Spring Mint dressing).

5. Pile it on a sandwich or wrap

Lettuce is great—but spinach adds a richer, more flavorful bite. Tuck a few leaves into sandwiches or wraps. Even better, use a large spinach leaf as a wrap!

6. Bake it into eggs

Frittatas, omelets, egg muffins—spinach was made for these. Chop it up and toss it in with whatever veggies and cheese you have on hand. Breakfast, lunch, or easy dinner—done.

7. Freeze it for later

Too much spinach? You can freeze it! Just:

  • Wash and dry it thoroughly

  • Chop roughly (especially large leaves)

  • Pack into freezer bags or containers

  • Label and store for up to 3 months

Tip: Freeze in portions you’d use for smoothies or soups. You don’t even need to thaw it—just toss it in.

Spinach is one of those greens that works with everything—and this overwintered harvest is especially sweet and tender. Don’t let a single leaf go to waste!
